The wine list at Rockpool Bar & Grill Melbourne showcases a selection from a mix of vineyards. Some are small, unknown producers whom we feel lucky to have come across whilst others are bigger with bold reputations and wines that are highly prized all over the world. What we search for in creating this offering are wines that reflect the people who make them and the land they are raised from.
Neil Perry AM is one of Australia’s leading and most influential chefs. Opening Rockpool in 1989 with the intention of establishing one of Australia’s finest restaurants, Perry has gone on to win a long list of awards, both here and overseas.
As Rockpool Dining Group’s Director of Culinary & Brands, Perry now oversees the culinary direction of the group’s restaurants, amongst them Rockpool Bar & Grill in Sydney, Melbourne and Perth, Spice Temple in Sydney and Melbourne, Rosetta Ristorante in Melbourne and Sydney, Jade Temple, Saké Restaurant & Bar in Sydney, Melbourne and Brisbane, Saké Jr and a growing number of Burger Projects across the country.
Zac’s dedication to great produce led him to the Rockpool Group in 2008. Recognising his outstanding talent, dedication and down-to-earth approach, Neil Perry put Zac through his paces and promoted him to Head Chef within five years.
Prior to Rockpool, Zac Nicholson started his career at Fishtales Café Warnambool in 2003 where he completed his apprenticeship. His skills were then fine-tuned in the exceptionally busy kitchen at Hotel Warnambool. In 2004 Zac set off to explore Canada and the US before returning to Melbourne in 2006 to re-establish himself, working at the Wesley Anne and Corner Hotels, and the Rockpool Bar & Grill.
